RECIPES FROM THE RETRO HOUSEWIFE
ABURAAGE NIWATORI (Japanese Fried Chicken), Japanese
My Grandmother left a hand-written note on this recipe which says "just fry" instead of deep fry, so if you like, you can just fry the chicken in a pan.RH
Cut chicken into small pieces. Beat the eggs and dip the chicken into the eggs all at one time. Roll the chicken in flour and deep fry. Boil sugar and soy sauce together.
When the chicken is golden brown, drain and dip into soy sauce and sugar mixture while still hot. Drain on rack. Serve.

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
