APFEL KUCHEN (Apple Cake), German
Pastry and Filling
Sift flour, add sugar and butter and blend well with a fork or your fingers. When mixture is blended, add egg yolk and lemon juice. Knead slightly until smooth. Roll out dough or pat into greased pan. Pour unbeaten egg white on top and spread evenly, remove any surplus and reserve. Peel and cut apples into slices 1/4-inch thick, arrange closely together on dough and sprinkle generously with sugar.
Mix well left-over white of egg, whole egg, cream and sugar, add rind and juice of lemon and pour mixture over apples. Sprinkle blanched and finely chopped almonds on top. Bake in moderate oven 45 minutes.
Remove from oven and let cake cool in pan on a rack. Cake can best be removed by turning the pan over on a plate, removing pan, and then turn cake over once more onto serving cake plate. Before serving, sprinkle powdered sugar over the top.
