MAIN COURSE

ARDEI UMPLUTZI (Stuffed Green Peppers), Romanian

This recipe is a variation of: SARMALUTZE DIN FRUNZE DE VITZA

Ingredients
  • About 8 green peppers
  • Meat filling (See Ingredients from grape leaf meat rolls)
  • On meatless days use only rice
  • onion and vegetable fat
  • Tomato Sauce

  • 3 tbsp. butter or other fat
  • 3 tbsp. flour
  • 1 minced onion
  • 1 cup tomato sauce
  • Broth from cooked peppers
  • Salt and pepper (if desired)
Preparation Instructions

Clean the inside of peppers. Fill, cover with water (scantily) or stock, add salt, pepper, dill and cook slowly about 1 hour.

Tomato Sauce

Melt butter, blend in flour, add minced onion, and cook until golden brown. Add Remaining Ingredients and Stir.

Add tomato sauce (or 2 cups tomato juice and broth and stir over low heat until smooth. Pour over cooked peppers and shake pan to distribute tomato sauce evenly. Simmer about 10 minutes.

Serve peppers with sour cream or yogurt. Serves 4.
