ARTISHO CU PARMEZAN (Artichokes with Parmesan Cheese), Romanian
Remove outer tough leaves of artichokes, cut off tips, tap on table, upside down to open artichoke a little, but do not break off leaves. Wash well in salted water, then drain upside down. Prepare filling: Mix together well the cheese, chopped garlic, anchovies and parsley and fill between each artichoke leaf. Place in large pot, greased with 1 tbsp. olive oil, side by side. Pour 1 tbsp, oil over each artichoke and add the water. Cook slowly about an hour, covered. May be served hot or cold. May be served as appetizer. Serves 6.
