SALAD

AVOCADO SALAD MOLD, American

This recipe is a great example of a 1950s style molded salad. (Mold as in shape...). They seemed to be nuts about molded salads back then, almost like somebody got hold of a pack of Jell-O and then everyone went hog wild! This is also a noteworthy recipe in that it uses avocado, but is in no way influenced by Mexican versions.

Ingredients
  • 2 packages lime-flavored gelatine
  • 2 cups boiling water
  • 1 ½ cups cold water
  • ¼ cup lemon juice
  • 2 teaspoons horseradish
  • 1 large avocado, sliced
  • 1 cup grapefruit sections
  • ½ cup chopped celery
  • 2 tablespoons pimiento
Preparation Instructions

Dissolve gelatine in boiling water: add cold water, lemon juice and horseradish. Chill until mixture is partially set. Carefully stir in avocado, grapefruit, celery and pimiento. Pour into mold and chill until firm. Makes 12 servings
