MAIN COURSE

BAUERNFRÜHSTÜCK MIT FRISCHEM SALAT ODER TOMATENSALAT (Farmers' Breakfast with Fresh Lettuce Salad or with Tomato Salad), German

Ingredients

    Bauernfrhstck

  • 4 medium boiled potatoes
  • 6 eggs
  • 1/2 lb. sliced boiled or smoked ham
  • 2 tbsp shortening
  • Salt and pepper
  • Grner Salat (Lettuce SaIat)

  • 1 head lettuce
  • Some fresh minced dill
  • 2 fresh scallions
  • 2 tbsp lemon juice (or 2 tbsp salad oil vinegar)
  • 1 tab. sugar
  • Salt and pepper to taste
  • Tomaten Salat (Salad with Tomatos)

  • 6 tomatoes
  • Salt and pepper to taste
  • 2 scallions
  • 2 tbsp salad oil
  • 1 tab. sugar
  • 2 tbsp lemon juice (or vinegar)
Preparation Instructions

Bauernfrühstück

Cut potatoes into small cubes and cut ham into small slices. Fry potato cubes and ham until golden brown. Beat eggs, salt and pepper, pour over potatoes and ham, stir a few times until dry, do not scramble. Cut in 4 pieces and serve with farmers' bread (rye) and butter. Note: If Bauernfrühstück is served for brunch, add a fresh salad.

Grüner Salat (Lettuce SaIat)

Wash lettuce, drain, take leaves apart. Mix lemon juice, oil, sugar, salt, pepper, chopped scallions and minced dill. Put leaves in salad bowl, pour dressing over and toss.

Tomaten Salat (Salad with Tomatos)

Slice tomatoes. Mix other ingredients together and pour over tomatoes in the salad bowl. Let stand a few minutes, then toss slightly. Serves 4
