BAKED GOODS

Blue Ribbon Carrot Cake, American

Ingredients

    Carrot Cake

  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 ½ tsp. baking soda
  • 1 ½ tsp. salt
  • 2 c. sugar
  • 1 ½ c. oil
  • 4 eggs
  • 2 c. finely grated carrots
  • Cream Cheese Icing

  • ½ c. butter, softened
  • 18 oz package cream cheese
  • 1 tsp. vanilla extract
  • 1 16 oz box confectioners sugar, sifted
Preparation Instructions

Carrot Cake

Preheat oven to 350°. Sift together flour, baking powder and soda, cinnamon and salt into large bowl. Add sugar, oil and eggs. Mix well. Add carrots. Blend thoroughly until moist. Grease 3 9 inch round cake pans line with wax paper. Bake at 350° F for 35 - 40 minutes. Cool 10 - 15 minutes. Frost.

Cream Cheese Icing

Combine butter cheese, vanilla in small bowl, cream well. Add sugar gradually beating until smooth. If mixture is thick, add a small amount of milk.
