Bread Hot Cakes, American
Anybody happen to know at what point "Bread Hot Cakes" became known as "French Toast"?
Soak bread in water for two minutes and then squeeze through a potato ricer. Add flour, salt and soda, beat in the egg and add sufficient milk to make a batter. Bake on a hot griddle, turning once. Serve with butter and syrup for a nice change in griddle cakes.

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
