How To Fry Yams

To fry yams, peel and cut lengthwise into one-quarter inch thick slices. Brown both sides in a little hot fat, then lower heat and cook slowly until yams are tender throughout.

SIDE DISH

BRUNEDE KARTOFLER (Browned Potatoes), Danish

Ingredients
  • 2 tbsp. shortening
  • ½ tsp. salt
  • 3 tbsp. sugar
  • 12 or more small round potatoes
Preparation Instructions

Melt shortening, preferably butter, in a frying pan. When shortening is hot, add the sugar. Stir. When it is brown, ad the boiled potatoes, stir constantly. When browned, sprinkle a little salt over the potatoes and serve. Serves 6.
