MAIN COURSE

BRUNSWICK STEW, American

Ingredients
  • 1-3-lb. chicken, or
  • 2 squirrels
  • 1 large sliced onion
  • 1/2 lb. lean ham (optional)
  • 6 cups tomatoes
  • 2 cups line beans
  • 1 small pod red pepper (optional)
  • 4 large Irish potatoes, diced
  • 1 cup corn (canned or cut fresh from cob)
  • 1 tbsp. salt
  • 1/4 tsp. Pepper
Preparation Instructions

Cut up chicken or squirrels, put into large pan with 3 quarts water, add onion, and ham out into small pieces. Sinner gently for 3 hours. Add other ingredients and simmer 1 hour longer. Stir frequently. Add 3 tbsp. butter and serve hut.
