CAVOLFIORE FRITTE (Cauliflower), Italian
Wash and separate cauliflower into medium-sized clusters. Cook in boiling salted water for 15 minutes. Drain. Dip each cluster in beaten egg yolk to which the salt, pepper and cloves have been added. Roll gently in the flour, fry in hot fat in a deep casserole, turning each cluster carefully and browning on all sides. Place on a platter in a warm oven until ready to serve.
