MAIN COURSE

CHAU FAN (Shrimp Fried Rice), Chinese

Ingredients
  • 9 lbs. long grain rice
  • 2 cups peanut oil
  • 2 lbs. chopped shrimp (cooked or raw)
  • 2 packages mushrooms (cooked or raw)
  • 6 eggs, beaten
  • 3 tsp. salt
  • 1 tsp. black pepper
  • 1 cup soy sauce
  • 3 green onions
  • Cold ham
Preparation Instructions

Cook rice and reserve, heat the peanut oil in trying pan. Put shrimps and mushrooms in frying pan, and stir constantly while frying. Add eggs, salt and pepper. Cook, still stirring, until eggs and shrimps are well mixed. Add rice and soy sauce and cook, stirring frequently, until rice is thoroughly heated.
