CHILI CON QUESO, American
Fry the onion in a small amount of olive oil, but do not brown. Then add and stir other ingredients, with the cheese added last. Heat and keep stirring until cheese melts. Taste and season with salt and pepper. If it is too wet, or if cheese is stringy, add cornstarch. Serve hot.
