RECIPES FROM THE RETRO HOUSEWIFE

MAIN COURSE

CHOW MEIN CASSAROLE, American

Contributor's Comment: Here is an old recipe from my grandmas recipe box ... "Chow Mein" cassarole, which is probably the most exotic dish in the whole collection! Actually I've made it and it's pretty good... plus its fast and a different way to use hamburger.

Ingredients
  • 1 lb. ground beef
  • 1 cup Minute rice
  • 1 can cream of celery soup
  • 1 can chicken with rice soup
  • ½ an onion, diced
  • 2 stalks celery, diced
  • 4 tbs. Soy Sauce (or more to taste)
  • 1 Pkg. Chow Mein Noodles
Preparation Instructions

Preheat Oven to 350 degrees. In skillet, cook ground beef over medium high heat until done. Add the chopped onion and celery to the pan and cook, about 5 minutes or until slightly softened. Stir in cream of celery and chicken rice soups, along with ½ to one can of water. Add the soy sauce and salt and pepper if desired. Remove pan from heat. Stir in Minute rice. Put all ingredients into casserole dish and top with the Chow Mein noodles. Bake in a 350 degree oven for 30 minutes.
