SOUPS

CHOWDER (A Seafood Dish), American

Ingredients
  • 2 dozen large clams or other fish
  • Milk
  • 2 jiggers white wine
  • Salt and pepper to taste
  • 2 jiggers water
  • 1/4 lb. saIt pork
  • Flour
  • Chopped onion
  • 1 tbsp. butter
  • Crackers
  • Chopped parsley
Preparation Instructions

Cut firm fish into pieces about 6 inches long, sprinkle with salt and pepper. (If you use clams, remove stomachs, and chop hard parts.) Now cover bottom of a Dutch oven with slices of salt pork (about 1/4 lb.) which has been half boiled. Place fish on salt pork, add chopped onion to fish. Cover with crackers that have been soaked soft in milk. Pour over all, 2 jiggers of white wine and 2 of water. Simmer gently about 1 hour. Take out fish and thicken gravy with a little flour and butter. Add chopped parsley and boil a few minutes. Pour over fish or clams and serve piping hot.
