MAIN COURSE

CLAMS IN THEIR SHELLS WITH RICE, Greek

Ingredients
  • 3 lbs. clams
  • 3 cups rice
  • 3 onions, chopped
  • ½ cup olive oil
  • Salt and pepper to taste
  • 3 to 4 whole stewed tomatoes, cut fine
  • ½ bunch parsley, chopped
  • 4 cups water
Preparation Instructions

Scrape clams with wire brush. Wash in cold water several times. Meanwhile, sauté onions in olive oil, add the other ingredients, stir, and finally add the clams. Cover pan and simmer for about 20 or 25 minutes until rice is cooked. Remove from heat and let cool a while before serving shells and all.
