MAIN COURSE

CLATITE (Rumanian Pancakes), Romanian

Ingredients
  • 3/4 cup flour
  • 1/2 tsp. salt
  • 1 cup milk (approximately)
  • 1 egg
  • Shortening
Preparation Instructions

In a utensil with a handle mix flour and salt, add 1/2 cup milk slowly and beat. Add egg and beat. Thin out batter with about 1/2 cup milk. Melt shortening (about 1 tsp.) in skillet. When hot, pour thin layer of batter in the skillet and spread it evenly by tilting it. Brown both sides. Fill the thin pancakes with cottage cheese (flavored with dill) or with jam.

Variation: Pancakes can also be filled with ground meat browned with onion in butter. The meat-filled pancakes should then be put in a casserole, have sour cream poured over them and be heated in the oven at 350°.
