SOUPSCurried Cauliflower Soup, AmericanMy mother is an expert at concocting variations of vegetable soups. Her soup recipes are great for dieting as they are filling, taste good and are low in calories, but high in nutrients. Ingredients
Preparation InstructionsMince onion, celery and carrots. Sauté together with olive oil until limp or browned (about 5 - 10 minutes). Add water (and bouillon) or stock and spices. Break cauliflower into flowerets and add to soup. Boil for 25 minutes, the run the entire pot contents through your food processor or blender. Blend in milk or cream and serve. Serving Suggestions: This soup can be "dressed up" and served as a first course at dinner or luncheon. To do so, garnish with finely chopped parsley or chives and a dollop of sour cream.
