Accurate Measure System Suggested

For measuring butter or shortening, and being specially accurate, use the water-displacement method. If you want a quarter of a cup of shortening, for instance, fill a measuring cup three-quarters full of water, then add shortening until the cup runs over. You'll have exactly one-quarter of a cup of shortening.

CZECH COFFEE CAKES, Czechoslovakian

  • 1 lb. flour
  • ¼ lb. butter
  • 3 ozs. sugar
  • 1 egg
  • 1 egg yolk
  • Lemon rind
  • Salt
  • 1 cup milk (sometimes you have to add a little more milk)
  • 1 cake compressed yeast
Preparation Instructions

Mix and let the dough rise. Roll out and cut with a doughnut cutter. Mix egg yolk with a little milk and sugar. Spread over the edges of the dough. Then proceed with one or more of the following variations.

Cream Cheese Filling

  • 1 cake cream cheese
  • 1 egg yolk
  • Lemon rind and sugar to taste

Mix the ingredients and spread on the dough. Trim with raisins.

Prune Filling

  • Prunes
  • Powdered cinnamon
  • Rum
  • Lemon rind
  • Cloves

Soak prunes in water overnight, cook in the same water until soft. Remove stones, grind, add powdered cinnamon, rum, lemon rind and cloves. Spread on the dough and decorate with sliced almonds.

Nut Filling

  • 5 level tbsp. walnuts, ground
  • 3 level tbsp. sugar
  • 1 tbsp. water
  • 1 to 2 level tbsp. sweet cream or half-and-half
  • Vanilla
  • Lemon rind
  • Cloves
  • ½ tbsp. bread crumbs

Mix sugar and water and bring to a boil, add nuts, sweet cream, vanilla, lemon rind, cloves and bread crumbs. Cut dough in squares , put filling into the center and close. Decorate with raisins.

Let the dough rise. Bake in a moderate oven until golden brown.
