DESSERT

Danish Christmas Pudding, Danish

I was brought up with this recipe as a kid in Denmark. It was only served during Christmas. To die for. My oldest daughter only askes for a punch bowl of this for Christmas, nothing else.

Ingredients
  • English measurements
  • 1 quart milk
  • 3 tbl spoons sugar
  • 1 c long grain rice
  • 1/3 c sherry
  • 3 tsp vanilla extract
  • 3/4 c ground almonds
  • 3/4 c whipping cream
Preparation Instructions

Cook rice in the milk over low heat with the sugar until it is done. Cool quickly. Add sherry, vanilla extract, and ground almonds and mix. Whip the cream and fold in. Serve with sour pitted cherries.
