Date-Walnut Pinwheel Cookie, American

Ingredients

• 1 c. chopped walnuts
• 1 c. chopped dates
• ½ t. lemon juice and rind
• 1 13-oz pkg. plain cookie mix
• 1 egg beaten
• 1 T. water
• ½ c. sugar
• ½ c. water

Preparation Instructions

Mix dates, lemon rind and juice, sugar and ½ cup water in a pan. Cook, stirring until thick, for about 10 minutes. Add walnuts. Cool. Blend cookie mix with egg and 1 tablespoon water. Roll in two 10x 7-inch rectangles. Spread with walnut and date mixture. Roll as for a jelly roll. Wrap in waxed-paper and chill until firm. Slice ¼ inch thick. Bake on greased cookie sheet at 375˚ for 8 to 9 minutes. Makes 4 dozen. These rolls can be frozen. Slice frozen and then bake.
