SOUPS

DICKE LINSENSUPPE (Thick Lentil Soup), German

Ingredients
  • 1 lb. lentils
  • 2 tbsp. shortening
  • 4 quarts water
  • 2 tbsp. flour
  • 1 lb. smoked pork
  • 1 tbsp. vinegar
  • Soup greens
  • 1 tsp. baking soda
  • Half of a celery root
  • Dash of sugar
  • Salt
Preparation Instructions

Soak lentils overnight in water with the baking soda. Strain lentils, add fresh water, and boil about 1 hour. Add meat, vegetables and other ingredients to lentils. Boil until meat is done and lentils are soft. Brown flour in shortening, thin out with a little cold water, add to boiling soup and stir. Spice with vinegar and a dash of sugar. Cut meat into small cubes and return to soup. Serves 8.
