Dipwiches Will Delight All
Just what is a dipwitch? A dipwich is a sandwich filled with canned meat and cheese then dipped in batter and browned until golden. We make our batter with easy to use, economical evaporated milk. For hearty dipwiches for man and boy proceed like this:
Cut lunchron meat Into 8 lengthwise slices. Place one slice on each of 8 bread slices. Top with cheese and remaining bread slices. In a shallow pan, beat together evaporated milk, eggs and mustard. Dip each sandwich into this mixture, turning to coat both sides. Brown on both sides in small amount of butter in skillet. Serve hot. Makes 8 sandwiches.

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
