FEGATO CON PEPERONI (Liver and Bell Peppers), Italian
Place olive oil in a deep skillet. Dredge thinly sliced small wedges of liver in flour and brown quickly in hot olive oil. Add green peppers, garlic, onion, parsley, salt and pepper to taste. Sauteacute; about 5 minutes. Add the tomatoes and let cook about 20 minutes. Serve with cooked rice. Serves 6.
The above served with mixed green salad and dessert makes a complete menu.
