RECIPES FROM THE RETRO HOUSEWIFE

APPETIZER

FISH SALAD, Bulgarian

Ingredients
  • 1 lb. fish fillets
  • 3 dill pickles
  • ½ bunch parsley
  • 3 stalks celery
  • 2 carrots
  • 1 bay leaf
  • 1 onion
  • Chopped pickles
  • Chopped parsley
  • ½ tsp. pepper
  • ¼ cup olive oil
  • Mayonnaise
  • Olives
  • 2 potatoes
Preparation Instructions

Put celery, potatoes, carrots, onion, bay leaf in salted water and bring to a boil. Cook about 15 minutes. Add fish to cooked vegetables and steam until tender. Drain. When cool, cut into small pieces. Add chopped pickles, parsley, pepper, olive oil and mix. Spread on small platter, and cover with mayonnaise. Decorate with olives and parsley.
