FISHERMAN'S SOUP, Greek
This soup is popular among fisherman who try to utilize the day's miscellaneous catch.
Boil small fish in enough water to cover, with ½ cup olive oil, 2 or 3 diced onions, 2 or 3 fresh sliced tomatoes, salt and pepper. Boil for about 30 minutes and strain. Use this as the stock for boiling large fish, shrimps. etc. Add enough water to cover. Simmer for 20 to 25 minutes.
