Leftover Chicken For SandwichesIf you have a little leftover chicken team it with celery, almonds and mayonnaise and use for a delicious luncheon sandwich. Preparation InstructionsRoll chicken in flour, salt and pepper mixed together. Then dip floured pieces of chicken in egg, then drop into bread crumbs, cover thoroughly with the crumbs. (I use a paper sack -- one for my flour and seasonings and one for my bread crumbs. This makes it easy to do and saves dishes.) Fry in deep fat about 5 minutes or until brown, then turn and brown other side. Remove from fat and place in large skillet having only one layer of chicken to cover the pan.
