MAIN COURSEFRIED TROUT, AmericanIngredients
Preparation InstructionsScrape and clean trout and wash in salt water. Wipe dry. Roll in flour and fry in sweet butter, oleo or salad oil, until brown and crisp. Remove from frying pan and lay on well heated dish. Pour off butter the fish were fried in (not over trout). Now fry parsley and sage in butter until soft and lay on fish. Mash up an anchovy in the scalding hot water and beat some butter into it. Pour over fish and serve. Garnish with leaves of strawberries, parsley, etc. Variation: Perch, pike or salmon may also be served in the same manner. Contributed by Mrs. F.
