SAUCESGarlic and Mashed-Carrot Sauce, CanadianThis is another recipe I nabbed from Weight Watcher's Canada. I really like their recipes, at least the ones that come complete on their newsletter! They are always easy as pie and very healthy (and I assume low in calories!) Here is the meal suggestion from Weight Watcher's Canada: >> Make a garlic and mashed-carrot sauce to serve over pasta or as a bread spread.<<If anyone is interested in signing up for the newsletter, here's a linky poo: Follow up! This is a brilliant recipe! We made this for dinner tonight and it was a big hit. It sounds wierd, but the carrot taste is mellowed through cooking, so the result is a really hearty, satisfying taste, with carrot level calories! Don't think of this one as a diet recipe...make it on a cold day, and enjoy! PS...I think pine nuts sprinkled over each serving before serving would increase the "Yummy" factor even more. Ingredients
Preparation InstructionsCook chopped carrots with garlic, olive oil, and a bit of water as a stock until mushy. Adding freshly grated parmesan cheese will make it creamy. Serve warm over fettucine. Note from RH: If you ask me, this is just screaming for black olives and walnuts as a topper. Serve with a fresh, green salad, and either a crisp white wine or a hearty red....wierd eh?
