MAIN COURSE

GEFÜLTES SCHWEINE- ODER KALBS-FILET (Filled Pork or Veal Steak), German

Ingredients
  • 8 very thin steaks of pork or veal (pounded thin)
  • 2 onions
  • 1 large can mushrooms
  • 1/2 lb. ground or chopped beef
  • 2 tomatoes
  • 1 bread roll, soaked in milk and squeezed
  • 1 cup sour cream
  • Salt and pepper
  • 1 egg
  • Flour
  • Shortening
Preparation Instructions

Salt steaks and stitch two together (making 4 steak pockets with 8 steaks), leave opening at one end. Prepare filling: Mix chopped meat with moistened bread roll, egg, chopped onion, about 1/2 of chopped mushrooms, salt and pepper. Fill steak pockets with this dressing and stitch together.

Melt shortening in casserole, add onion and brown; add tomatoes and mushrooms and cook well. Then add steak pockets, brown quickly on both sides, add 3 cups boiling water. Bake in oven (350") about 45 minutes or until done. To the gravy add sour cream, salt, pepper, and a little flour mixed with cold water for thickening.
