GREEK YOGURT CAKE, Greek
Cream margarine and sugar until fluffy. Add yogurt and beat again. Add eggs and lemon rind and beat for 5 more minutes. Sift flour with baking powder and add a little at a time mixing well. Grease and glour deep baking pan. Bake in 325° oven for 45 minutes and then turn heat up to 375° for 20 to 30 minutes. When cooled, sprinkle powdered sugar on top.
