Guinness Corned Beef? Brilliant!, Irish

Ingredients
  • 4 pounds corned beef brisket
  • 1 cup brown sugar
  • 12-ounce can of Guinness
Preparation Instructions

Preheat oven to 300°. Rinse beef completely and pat dry. Place brisket on rack in roasting pan or Dutch oven. Rub brown sugar onto beef, coating the entire brisket, including the bottom. Pour Guinness around and gently over the beef to wet the sugar. Cover and place in preheated oven to bake for 2½ hours. Allow to rest 5 minutes before slicing serving.
