MAIN COURSE

HERINGSALAT (Herring Salad), German

This recipe, or a variation of this recipe are often served as a light meal on Christmas Eve. Smoked salmon on bread and some Champagne go well with it!

Ingredients
  • 1 lb. roasted white meat chicken and/or pork)
  • 3 ripe apples
  • 3 sour pickles
  • 2 sweet pickles
  • (peal, 1/2 lb. boiled potatoes (boiled 1/2 lb. red beets (boiled and peeled)
  • Several anchovies
  • Some pickled pumpkin or mixed pickles (if desired)
  • 4 herrings in skins)
  • 2 tbsp. vinegar or lemon juice
  • 2 tbsp. Salad oil
  • 1 tbsp. mustard
  • 3 hard-boiled eggs
  • 1/2 cup mayonnaise
  • Salt and pepper
  • Dash of sugar
Preparation Instructions

Cut meat, apples, pickles, beets, anchovies, pickles or pumpkin, herrings, potatoes into very small cubes. Add vinegar, oil, mustard, pepper, salt and some sugar. Mix and let stand for several hours (or in refrigerator overnight). Next day, pour off some of the juice that has accumulated, add chopped eggs and mayonnaise. Decorate with thin slices of pickles, eggs, red beets and herring. Serves 6.
