RECIPES FROM THE RETRO HOUSEWIFE

SIDE DISH

Heshu (Arabic Rice stuffing), Arabian

Ingredients
  • 1 lb. meat (coarsely ground lamb or beef)
  • 2 cups rice
  • 2 tbsp. Butter
  • About 4 cups chicken broth or water
  • Spices
  • Seasoning to taste
Preparation Instructions

Put meat in pan, add spices, seasoning and butter. Brown on low to medium flame, add more butter if needed. Add rice and carefully stir to mix. Add 4 cups chicken broth or water. Stir. Taste for salt. Cook uncovered until rice and broth are level. Stir once again. Lower flame as far as possible. Cover, cook for 45 minutes. Serves 6-8.
