MAIN COURSE

HOLODIETZ (Jellied Pigs Feet), Russian

Ingredients
  • 4 pigs feet (about 2 lbs.)
  • 2 or 3 laurel leaves
  • 10 grains black pepper
  • 2 onions
  • Salt to taste
  • ½ lb. pork meat
  • 3 or 4 carrots
  • 6 or 7 celery stalks
  • 3 hard-boiled eggs
Preparation Instructions

Boil pigs feet in 2 quarts water for 2 hours with laurel leaves, pepper, quartered onions, and salt to taste. After 2 hours add pork meat, carrots, celery stalks and cook for 1 ½ hours longer on slow fire. remove bones and chop meat finely. Strain bouillon left in pot. Line a Pyrex baking pan with hard boiled eggs and carrots, then chopped meat, cover with bouillon and place in refrigerator overnight. Serve with Horse-Radish Sauce.
