MAIN COURSE

IRI DOFU (Fried Soy Bean Curd), Japanese

Ingredients
  • 1 soy bean cake (otofu)
  • 1 egg
  • 3 mushrooms (ahiitake)
  • 1 small carrot
  • 1 stem green onion, chopped fine
  • 2 tbsp, shredded shrimp (oboro-ebi)
  • 1 tbsp, salad oil
  • 3 tbsp, sugar
  • 4 tbsp. soy sauce
  • ¼ tsp. ajinoctoto (Accent)
  • ½ tsp. salt
Preparation Instructions

Parboil soy bean cake. Put in cloth and squeeze excess water from it. Put oil in frying pan and fry crumbled tofu for 5 minutes, stirring constantly. Add seasoning, chopped carrot, mushrooms and shredded shrimp. Fry 10 minutes more over medium fire. Beat egg, pour over fried mixture and fry for 5 more minutes. Add chopped green onion and serve warm.
