MAIN COURSE

JR BAU JI (Wrap-baked Chicken), Chinese

Ingredients
  • ½ cup onion, chopped fine
  • ¼ cup fresh ginger root, chopped fine
  • 1 cup soy sauce
  • 1 tsp. salt
  • 2 tbsp. sugar
  • 1 tsp. white pepper
  • 2 eggs, beaten
  • 1 tbsp. cooking sherry
Preparation Instructions

Mix these eight ingredients together in a deep pot. Soak the cut fryer in this pot for 2 hours. Stir occasionally. Wrap tightly one or two pieces of the cut and soaked fryer with each sheet.

Put all the wrapped pieces in a 13 by 9 inch pan. Bake in preheated oven (350°) for 2 hours - for one and a half hours if you like them tender. Use one big piece of aluminum foil to cover the whole pan for best results. Serve as wrapped.
