RECIPES FROM THE RETRO HOUSEWIFE
KAALIKAEAERYLEET (Cabbage Rolls), Finnish
Cook cabbage so that leaves can be separated and folded without breaking; remove thick vein. Cook rice until soft; mix with ground beef, salt, bread crumbs, egg and milk. Mix well. Place about 2 tbsp. of the mixture on each cabbage leaf, fold and roil leaf. Fry cabbage roll in butter until brown. Place in layers in casserole; sprinkle each layer with sugar and salt; add meat stock. Cover and bake in a slow oven 3 to 4 hours.
Cabbage rolls taste better when re-heated the following day. Serve with lingonberry preserves.A sauce can be made from the stock by adding cream, if desired. The recipe can be varied by adding mushrooms.

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
