KARTOFFELKLOSSE (Potato Dumplings), German
YUMMY!!! One of my personal favorites. You can also buy the "dough" ready made from German specialty shops.
Mash potatoes. Mix eggs and milk, add flour slowly with baking powder and beat well, then add to potatoes. Add salt and mix thoroughly. Form tennis ball-size dumplings with wet hands, fill each with about 4 or 5 bread cubes (or 1 tsp. bread crumbs). Put dumplings into boiling salted water. After dumplings emerge, let simmer about 15 minutes more.
