SIDE DISH

KARTOFFELPUFFER (German Potato Pancake), German

Ingredients

• 3 lbs. potatoes (as large as possible)
• Some salt
• Dash of sugar
• 3 tbsp. or more of flour
• 2 egg yolks

Preparation Instructions

Peel and grate potatoes with a small grater, using an earthenware bowl to keep the potatoes from discoloring. Add grated onions, flour, seasonings, eggs, and stir well until mixed. Fry by spoonfuls in frying pan until golden brown. Serves 4.
