MAIN COURSEKEBAP (Barbequed Meat on Skewers), TurkishIngredients
Preparation InstructionsCut meat into 1 inch cubes. Place meat in dish, sprinkle with salt and pepper and cover with slices of onion and tomatoes and a few bay leaves. Marinate meat in mixture of olive oil, wine and oregano. Place in refrigerator overnight. Arrange meat on skewers alternately with tomatoes and onions, and an occasional bay leaf. Broiling over charcoal is preferable, but it may also be done over an open wood fire or in an oven broiler. Green pepper may be inserted between the meat on the skewers. Contributed by Mrs. L.
