SOUPS

KESAEKEITTO (Cream of Vegetable Soup), Finnish

Ingredients

• 1 quart water
• 2 quarts milk
• 1/5 lb. butter
• 3 tbsp, flour
• salt and sugar to taste
• 1 tbsp. chopped parsley leaves
• 2 Ibs. fresh vegetables: diced carrots, peas, Sliced sweet pea pods, diced cauliflower, spinach leaves

Preparation Instructions

Clean vegetables; cook in slightly salted water until tender. Blend butter, flour and milk as for white sauce, adding vegetables and stock as soon as milk mixture boils. Add spinach leaves that have been sliced. Season, sprinkle parsley leaves on top and serve.
