SAUCES

KIM CHEE (Popular Korean Relish), Korean

Ingredients
  • 1 daikon (long white Oriental radish)
  • 2 or 3 hakusai (Chinese cabbage)
  • 1/2 bunch green onions
  • Small amount fresh ginger
  • 10 to 15 Olympia oysters (small)
  • 1 to 2 cloves garlic
  • 1 tsp. Ajinomoto (mono sodium glutamate)
  • 1/4 red bell pepper or speck of cayenne pepper
  • 1 to 2 tbsp. paprika
Preparation Instructions

Cut Chinese cabbage in quarters or halves and soak in salt water to cover for half a day. This is to add flavor. Wash and rinse in water and drain. Cut in 1 or 2-inch pieces.

Wash radish in water, peel and cut in same size pieces as cabbage.

Slice green onions into 1-inch pieces and then into strips lengthwise. Chop garlic, ginger and red bell pepper.

Combine seasoning and mix with above vegetables and whole oysters. Leave mixed ingredients at room temperature for 2 days or in a warm place for 1 day. Serve in a deep bowl.
