Tips

Good tools are essential for cooking. If you are looking for the gold standard in glassware, always buy Pyrex. Use their glassware as regular mixing bowls that can go into the microwave or the oven for heating with no worries. If you have ever tried to melt butter in the microwave in a measuring cup made of regular glass, you know that regular glass often breaks at temperatures necessary to melt butter or chocolate. If your glassware is Pyrex you never have to worry about it.

MAIN COURSE

KOTTBULLAR (Swedish Meet Balls), Swedish

Ingredients
  • 1 ½ Ibs. beef
  • 2 potatoes, boiled and mashed
  • ½ lb. pork
  • 3 tsp. salt
  • 3 slices bread
  • ½ tsp. pepper
  • 2 cups water
  • 2 eggs
  • 1 onion, minced and sauteed
  • Butter or fat for frying
Preparation Instructions

Have butcher grind meat a couple of tines. Soak bread. in water. Mince and saute onion. Mash the potatoes. Now mix all ingredients to a large bowl and keep on working it until smooth and spongy. It is easier to achieve this by using your bands. Heat butter or fat in frying pen. Shape balls by using spoon and palm of your hand, both wet. Brown evenly in fat, shaking the pen during cooking to keep the round shape. Transfer to kettle. Repeat until mixture is used up. Prepare gravy.
