MAIN COURSE

KOTTBULLAR (Swedish Meet Balls), Swedish

Ingredients

1 ½ Ibs. beef
2 potatoes, boiled and mashed
½ lb. pork
3 tsp. salt
3 slices bread
½ tsp. pepper
2 cups water
2 eggs
1 onion, minced and sauteed
Butter or fat for frying

Preparation Instructions

Have butcher grind meat a couple of tines. Soak bread. in water. Mince and saute onion. Mash the potatoes. Now mix all ingredients to a large bowl and keep on working it until smooth and spongy. It is easier to achieve this by using your bands. Heat butter or fat in frying pen. Shape balls by using spoon and palm of your hand, both wet. Brown evenly in fat, shaking the pen during cooking to keep the round shape. Transfer to kettle. Repeat until mixture is used up. Prepare gravy.
