RECIPES FROM THE RETRO HOUSEWIFE
KYUURI NAMASU (Marinated Cucumbers), Japanese
Peel cucumbers and cut in half lengthwise. Take the halves and slice them very thin crosswise. Put the sliced cucumbers in a deep bowl or any deep utensil. Add salt and let stand.
Now take sugar, vinegar, pinch of salt, pinch of mono sodium glutamate, arid mix all together until well blended.
Wash the cucumbers with water and squeeze the water out. Put the cucumbers into the liquid mixture. Mix well. Chill in refrigerator until ready to serve. Place the cucumbers in a deep bowl and add the crabmeat or shrimps. The meat may be mixed with the Nasiasu or just placed on the top, serves 4 to 6
Variation: Other vegetables may be used in place of cucumbers. Also combinations of vegetables may be used such as celery, carrots and daikon (Japanese long white radish).

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
