LEBERKNOEDEL (Liver Dumplings), German
This, Kartoffelknoedel and Semmelknoedel are some of my favorite German side dishes! Serve it with one of the German roasts, and make sure you have plenty of gravy!
Prepare the liver by removing the tough membranes and tubes and chop very fine. Add eggs, grated bread rolls, flour, thyme, salt and pepper and mix well. Bring hot water to a boil and add a little salt. Make (with a large tablespoon) balls of the liver mixture and put into the boiling salted water. Let balls simmer for 10 minutes and remove from water.Goes with: Gravy - Make this to go with your Leberknoedel.

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
