SIDE DISH

LEBERKNOEDEL (Liver Dumplings), German

This, Kartoffelknoedel and Semmelknoedel are some of my favorite German side dishes! Serve it with one of the German roasts, and make sure you have plenty of gravy!

Ingredients
  • 1 lb. beef liver
  • 4 grated bread rolls
  • 2 tbsp. flour
  • 2 eggs
  • 1 tsp. salt
  • Some pepper
  • Dash of chopped thyme
Preparation Instructions

Prepare the liver by removing the tough membranes and tubes and chop very fine. Add eggs, grated bread rolls, flour, thyme, salt and pepper and mix well. Bring hot water to a boil and add a little salt. Make (with a large tablespoon) balls of the liver mixture and put into the boiling salted water. Let balls simmer for 10 minutes and remove from water.

Goes with: Gravy - Make this to go with your Leberknoedel.
