MAIN COURSE

Leftover Delight With Oxo Gravy, Canadian

Ingredients
    Oxo Gravy:
  • 4 tbsp. Drippings (preferably from the roast or meat)
  • 1 small onion, finely chopped
  • 6 tbsp. Flour
  • 2 Oxo Cubes or Two Teaspoons fluid Oxo
  • 2 C. boiling water
  • 1 tsp. Salt ( I personally reduce this by half - no wonder there is so much high bl. pressure)
  • 1/8 tsp. Pepper
Preparation Instructions

Cube leftover meat, mix with vegetables such as peas, and carrots, any vegetable excluding potatoes. Place in the bottom of casserole and cover with Oxo Gravy, top dish with fluffy mashed potatoes. Sprinkle with paprika or grated cheese. Pop into a moderate oven (350 degrees) about 30 minutes, until nicely browned. The meaty "punch" is in the Oxo Gravy.

Method: Melt drippings and cook onion in it til tender, add flour and brown richly, stirring constantly. Mix Oxo and boiling water stirring until dissolved. Add hot liquids very slowly to browned mixture, stirring until blended; add salt and pepper and cool, stirring constantly, until gravy is smoothly thickened.
