Lemon-Mint Fizz, Canadian
Here is another recipe "lifted" from the Weight Watcher's Canada weekly newsletter. This one sounded too yummy to pass up, and since it is from , it must be diet safe!
Combine sugar, lemon juice and chopped fresh mint leaves in saucepan. Stir over medium heat until sugar dissolves. Simmer 2 minutes and remove syrup from heat. Let cool. Strain out solids.
Fill 4 glasses with ice cubes. Pour 3 tablespoons syrup and then 3/4 cup seltzer water in each glass. Top with lemon zest and garnish with mint leaves.
