MAIN COURSE

LIVER AND VEGETABLE SAUTÉ, American

Ingredients
  • 1/2 lb. sliced beef liver 2 T. flour
  • 3 T. butter or margarine
  • 1 c. sliced mushrooms
  • 1 small green pepper, cut into rings
  • 1 8-oz. can stewed tomatoes
  • 3/4 t. salt
  • 1/4 t. chili powder
  • Dash of cayenne pepper
  • Lemon juice
Preparation Instructions

Flour liver. Heat liver in butter until brown on both sides, about 5 minutes. Stir in remaining ingredients except lemon juice. Heat to boiling. Reduce heat, simmer until liver is done, about 10 minutes. Sprinkle with lemon juice.
