RECIPES FROM THE RETRO HOUSEWIFE

MAIN COURSE

MAKSALAATIKKO (Liver Casserole), Finnish

Ingredients
  • 1 3/4 lbs. calf liver
  • 10 oz. syrup
  • 2 eggs
  • 1 tbsp. salt
  • 1/5 lb. butter
  • 2 1/2 cups rice, cooked in 2 quarts milk
  • 1 onion
  • 1 or 1 1/2 cups raisins
Preparation Instructions

Wipe liver with damp cloth and put through meat grinder. Mix liver with rice. Add diced onion sautéed in butter. Add syrup, raisins, beaten eggs and seasoning; mix well. Bake in buttered casserole in moderate oven until light brown.
